Buffalo Chicken and Serrano & Parmesan Ravioli
A couple of days ago we made a batch of ravioli from scratch. Half of the ravioli were filled with Serrano Ham and Parmesan Cheese while the rest were filled with Buffalo Chicken. I took a couple pictures:

We made a simple batch of pasta dough and used the Kitchen Aid attachment to make lasagna noodles. The pasta sat out to dry for a couple of hours. It was still flexible when we filled the ravioli and pressed the seams together. The Buffalo Chicken filling was made from chicken breasts that we ground up, cooked and spun with homemade buffalo sauce. The Serrano Ham was cooked, chopped up and piled up with shredded Parmesan.
The ravioli was boiled for a couple of minutes then dried, dipped in bread crumbs and pan fried to get the outside nice and toasted. We ended up with about 14-16 ravioli that were about 3 inch squares, more than enough to make dinner for two.

Oooh! Oooh! This is an excellent example of how to use an extruder attachment. You've inspired me, I've been undecided on whether or not to buy an extruder, but this looks fantastic!
